Gingerbread Latte Mousse
It’s the holiday season and gingerbread time! One of my favorite smells during the holidays is when I have gingerbread cookies baking in the oven. It’s that very distinctive smell of spices that warm the air and tickle your nose.
All the coffee shops have holiday flavored coffee and latte’s, so in honor of the popular beverages, I wanted to come up with a recipe that was a little more decadent in taste that incorporated the taste of gingerbread. This is when gingerbread latte mousse was born! I have a secret too, it’s TWO STEPS and DAIRY FREE!
Ingredients:
-1 14 oz. can of coconut milk (Do not use the type you drink. It must be canned)
-1 box French Vanilla pudding mix
-1 Tablespoon molasses (I used “Grandma’s” brand)
-1/4 teaspoon vanilla extract
-1 Tablespoon cinnamon
-1 teaspoon ground nutmeg
-1/2 teaspoon ground cloves
-1/2 teaspoon pumpkin pie spice
-1 teaspoon ground ginger
Step#1
Start by using your electric mixer to whisk the entire can of coconut milk and entire box of French vanilla pudding until smooth and creamy.
Step#2
Whisk in molasses, vanilla extract and spices until combined.
Step #3
Spoon into fancy coffee or latte’ mugs and serve!
FUN FACT: The most recent record broken for largest gingerbread house was in Texas and measured 40,000 cubic feet and needed a permit to build. Just like a regular house!!
