Double Pumpkin Mini Trifles

It’s October, which means it's officially pumpkin season! The idea for this dessert came from a marriage of two desserts that I love, pumpkin bread and pumpkin dip! The first thing I ever made was a black forest trifle and ever since then, trifles are a favorite of mine. Trifles can often look intimidating but are in fact so easy to make and so pretty to look at! I took some short cuts to make this a bit less time consuming for busy families by using a box pumpkin bread mix, but added some of my own ingredients to it. Layer that with pumpkin mousse and you got yourself a trifle!

Ingredients:

-1 box “Libby’s” pumpkin bread mix. Bake according to directions. This particular mix makes two loaves, but you don’t need that much

-1 granny smith apple cubed

-1/4 cup raisins

-1 box French vanilla pudding mix (do not make the pudding)

-2 Containers of “Chobani” pumpkin harvest crisp yogurt

-1 15 oz. can “Libby’s” pumpkin

*Makes 8 servings

 

Step#1

Make pumpkin bread according to directions. Add apples and raisins. Bake for an hour and 10 minutes until center of bread is no longer wet.

Step#2

While that is baking, make your mousse by mixing pudding mix, pumpkin and both containers of pumpkin yogurt. Refrigerate. DO NOT add the crunchy topping, save that for later.

Step#3

Once the pumpkin bread is baked and cooled, cut it into cubes and place on the bottom of serving glass.

Step#4

Next add a layer of the pumpkin mousse, and repeat until you have three layers. Top with crunchy topping that came with the yogurt.

FUN FACT: Pumpkins were first introduced to America by the Native Americans. They were considered one of three very important plant-based foods, the other two being maize and beans. The three were usually eaten together.
