BEACHY SHRIMP KABOBS

It's summer, which means it's grilling season! I love seafood in the summer, and there’s nothing better than combining that with the grill. To add to the tropical essence, I added some pineapple, green peppers and cilantro. Any time you are making kabobs with wooden skewers, make sure you ALWAYS soak them in water before hand to ensure they do not burn on the grill!

Ingredients:

-12 oz of fresh, de-veined shrimp.

-16 oz can pineapple chunks in 100% pineapple juice

-2 green peppers sliced

-2 tablespoons garlic powder

-chopped cilantro

-1 lime

Tools:

-Grill

-wooden or metal skewers

-----------------------------------------------------

Step#1

Soak wooden skewers in water. Make sure they are completely submerged.

Step#2

De-shell, de-vein and rinse shrimp. Then place in a gallon size Ziplock bag. Open can of pineapple and pour pineapple JUICE only into the bag of shrimp. Save pineapple chunks for skewers. Let that sit and marinade in the refrigerator for a couple hours.

Step#3

Cut up green peppers, set aside.

Step#4

Begin by taking one skewer at a time out of the water and start building your kabobs with shrimp, green pepper and pineapple chunk. Repeat about 2 more times on each kabob. Repeat and place on a slotted grilling pan.

Step#5

Sprinkle the garlic powder all over kabobs followed by a good squeeze of half your lime (reserve other half for when shrimp is done cooking). Sprinkle a small amount of chopped cilantro on top as well.

Step#6

Place on grill on medium heat and close lid. Every few minutes, rotate kabobs using an oven mitt. Over all cooking time should be about 20 minutes. Make sure the shrimp is pink in color and isn’t glossy in areas as that could mean it's undercooked.

Step#7

Remove from heat and place on serving platter. Squeeze the juice from the other half of the lime all over as well as more chopped cilantro. Pull up a beach chair and enjoy!

FUN FACT: Shrimp is very low in calories and high in protein! Sounds like the perfect beach food! However, don't go overboard if you are watching your cholesterol, as it is also a bit on the higher side in cholesterol.
