Magical Mickey Bars

The minute summer begins, the first thing I think about is going to Disney World! Growing up, I would spend a wonderful week during summer vacations going to the happiest place on Earth! I still love it to this day and look for any little thing to remind me of my visits there during the long drought in between visits.

IF you need a little taste of Disney at home, these are a great treat to make for your family and friends. The "Premium Ice Cream Bar" is one of the most iconic treats to eat at the Disney Parks and this recipe spinoff will bring you right back to your childhood!

Ingredients:

-One gallon of the ice cream of your choice (I used "Cookies and Cream")

-8oz bag of semi-sweet chocolate chips

-2/3 cup coconut oil

-sprinkles

-1/4 teaspoon vanilla

Tools:

-large popsicle sticks (found at a craft store)

-Mickey Mouse cookie cutter

-Lined cookie sheet (line with wax paper or silicone baking mat)

-double boiler

Step#1

Sit your ice cream out until soft enough to spread. Line cookie sheet with wax paper or silicone baking mat. Spread softened ice cream with spatula until even. Make sure it's at least 2 inches thick. Place in freezer for one hour.

Step#2

Take cookie sheet out of the freezer and use your cookie cutter to cut out as many Mickey ears as possible. Place on another lined cookie sheet and place back in the freezer. You can use the ice cream “scraps” to spread and re-freeze to repeat the process.

Step#3

While the Mickey ice cream ears are hanging out in the freezer, make your chocolate mixture!

Step#4

In a double boiler, place chocolate chips, coconut oil and vanilla inside. (NOTE: If you don’t have a double boiler, just fill a small pot with a few inches of water and bring to a low boil/simmer with another pot sitting snugly on top).

Step#5

Stir the chocolate continuously until all the coconut oil clumps are completely dissolved and you are left with a smooth and shiny chocolate. Place in a separate bowl and let cool close to room temperature.

Step#6

Using two spoons, gently dip your frozen Mickey ears straight out of the freezer into your chocolate and place back on cookie sheet. It will harden as you finish the others. Go back to the first one and lightly drizzle more chocolate on top, followed by sprinkles while still wet. Place back in freezer one more hour.

Step#7

Once your Mickey ears have fully hardened with the chocolate, you may place your popsicle stick inside and seal the seam with a little more chocolate to secure the stick. Freeze for 10 more minutes or until ready to eat. Enjoy your magical treat!
