Crunchy Honey Mustard Pretzel Chicken And Sweet Potato Fries

School is OUT and families are getting ready for outdoor fun and food! This is a great summer dinner for kids and adults to indulge in. This baked chicken is so crunchy and full of honey mustard flavor, you won’t even miss the “fried” part of traditional crispy fried chicken.

Lets not forget the sweet potato fries as a side! These fries are also baked rather than fried, which saves a lot of calories but still offers a lot of flavor and health benefits!

Ingredients for honey mustard chicken:

-8-10 Chicken tenders

-1 cup pretzels (salted)

-2 cups Panko bread crumbs

-1/2 teaspoon garlic powder

-1/4 cup yellow mustard

-1 teaspoon dijon mustard

-1/2 cup mayonnaise

-1 tablespoon honey

-salt and pepper

Ingredients for sweet potato fries:

-2 large sweet potatoes

-2 tablespoons melted butter

-cinnamon

-paprika

-chili powder

-sea salt

Pre heat oven to 350 degrees ( for chicken) and 400 degrees for sweet potato fries.

Directions for chicken:

Step #1

Place your pretzels in a ziplock bag and crush them into crumbs. Place in a shallow dish with Panko, garlic powder, salt and pepper.

Step#2

In a separate dish, stir together yellow mustard, dijon mustard, mayonnaise and honey.

Step#3

Sprinkle salt and pepper on both sides of your chicken tenders and dredge in honey mustard mixture.

Step#4

Then roll around in pretzel crumb mixture and coat completely. Place on a lined baking sheet. Bake at 350 degrees for about 28 minutes.

Directions for sweet potato fries:

Peel sweet potatoes

Step#2

Cut potatoes into discs

Step#3

Melt butter and pour all over sliced potatoes on a baking sheet. Using hands, mix it all in until all potatoes are coated. Then sprinkle all your seasonings to the amount desired. Mix again with hands.

Step#4

Bake at 400 degrees for 20 minutes. then, using a fork, flip them onto the other side and bake another 15 minutes.

FUN FACT: Sweet potatoes contain both collagen and magnesium, which help our bodies cope with stress.
