Lemon-Pepper Fettucine with Brown Butter Lemon Sauce
Pasta! Pasta! Pasta! SO many ways to prepare pasta. With summer just around the corner, I came up with a lighter, lemony recipe that will leave you feeling happy! If you have a pasta maker, homemade noodles are super easy to make and taste so fresh! If you don’t have a pasta maker, don’t worry, you can still find a boxed lemon-pepper fettuccine or spaghetti at select stores.
Ingredients for noodles:
-2 eggs beaten
-1 teaspoon salt
-2 cups flour
-2 tablespoons olive oil
-3 tablespoons water
-1 teaspoon lemon-pepper seasoning
-lemon zest from 1/2 lemon
Ingredients for brown butter sauce:
-1 1/2 sticks salted butter
-2 whole cloves garlic
-Lemon zest of the other half of first lemon used.
-Juice of half a lemon
Tools:
-Pasta Maker
-Electric standing mixer with dough hook attachment.

Step#1
-Beat eggs first. Add all other ingredients. Turn electric mixer on low/ medium with dough hook attachment. Stir until ball forms.
Step#2
Sprinkle some flour on a clean surface and gently knead dough until it becomes a little more firm and elastic. Let sit for 10 minutes.
Step#3
Cut off small portions of dough, and using a rolling pin, roll dough out nice and thin. You don’t want it too thick or you will have a very thick pasta noodle!
Step#4
Run each small rolled out portion through your pasta maker. Add to boiling water immediately. Fresh pasta cooks VERY quickly! It will float to the top when its ready.

While your pasta cooks, start melting your butter in a sauce pan. Add whole cloves of garlic and lemon zest. Cook on low/medium heat and stir so it doesn’t burn. Butter will brown rather quickly.
Step#6
Once your butter and garlic cloves have browned, you may remove the garlic and transfer sauce to a bowl. Add lemon juice.
Step#7
Drain your pasta and pour into a serving bowl. Add sauce and combine. Add a little Italian parsley for a pop of color!
