Sweet & Savory Shredded Chicken On Cornbread

In the mood for sweet and savory shredded chicken in a cornbread sandwich? Well, I got the recipe for you right here! I love the sweet and savory combo and the sauce on this shredded chicken is a nice combination of zesty salsa and BBQ sauce.

I wanted to serve it as a sandwich, but in a different way. So I cooked up a yummy cornbread that is strong enough to hold all the goodness in the middle! A classic cornbread tends to get a bit crumbly and messy, and wouldn’t be able to hold anything between two pieces. However, this recipe for cornbread is not crumbly, but perfect to make your sandwich with!

Ingredients for shredded chicken:

-3 boneless, skinless chicken breast.

-14 oz package of Peach-Mango salsa (I use Sabra brand)

-1/2 cup ketchup

-1 tablespoon cider vinegar

-1/4 cup brown sugar

Tools:

Crockpot

Cookie sheet with edges

Parchment paper

Ingredients for sturdy cornbread:

-1 stick unsalted butter, melted

-1/2 cup sugar -2 tablespoons honey -2 eggs -1 tablespoon vanilla -1 1/2 teaspoon baking powder -3/4 cups cornmeal -1 1/4 cups all-purpose flour -1/2 teaspoon salt -1/4 teaspoon paprika

-1/2 teaspoon chili powder -3/4 cup milk

Preheat oven to 350 degrees

Step#1

Place all your ingredients for the chicken in a crockpot, cover and turn on HIGH.

Step#2

Once you have your chicken and sauce going in the crockpot, melt your butter. Add honey and sugar to melted butter and stir.

Step#3

Stir in eggs and vanilla.

Step#4

Add flour, cornmeal, baking powder, salt, paprika and chili powder. Stir until it

becomes firm. Whisk in milk until batter has formed.

Step#5

Spray your cookie sheet with a bit of non stick spray. This will act as the “glue” to keep the parchment paper on your baking sheet. Proceed to spray on top of the parchment paper as well.

Step#6

Pour your cornbread batter and spread evenly across pan. Bake at 350 degrees for 25 minutes.

Step#7

Once your cornbread has cooled, used a large round biscuit cutter to cut out discs for your sandwich.

Step#8

After 2.5 hours in the crockpot, cut your chicken to make sure it is cooked through. Place on a cutting board and with two forks, shred apart. Add back into crockpot.

Step#9
