Peach-Mango Summer Pudding

I don’t know about you, but nothing says summer time like peaches and mangoes! Not to mention the extra step of grilling the peaches for garnish! It's truly the perfect spring and summer treat!
I’m a huge fan of bread pudding, and this light and airy cake is much more like a bread pudding than it is a cake. It's so crazy moist, you just eat it with a spoon! It's like a burst of summer exploded in your mouth!
I wanted to make something pretty stress free and easy. It's like a “dump cake” recipe and you won’t believe what we use to make it so good!
Ingredients:
-1 box yellow cake mix (I used Pilsbury Moist Supreme)
-2/3 cup peach/mango seltzer water
-1 1/2 cups mango/peach V8 Fusion juice
-1 1/3 cup fresh or frozen (and thawed) peach slices FOR BATTER.
-An additional 1 cup peaches for grilling to put on top. Do not cube these, leave as slices.
-3 tablespoons melted butter

Directions:
Preheat oven to 350 degrees
Step#1
Cut up your 1 1/3 cup peaches into cubes.

Step#2
Combine cake mix, seltzer water and juice by gently folding to keep it airy. Then fold in cubed peaches. Batter will be light and bubbly!

Step#3
Place a loaf pan on top of a cookie sheet for extra stability and in case cake spills over in oven. Spray with non stick spray and pour in batter. Place in oven at 350 degrees for one hour.

Step#4
While your cake is baking, you can get started on your grilled peaches! Melt butter in a microwave safe bowl and stir in 1 cup of peach slices into the butter.

Step#5
If you have a griddle like I do, spray with non-stick spray and place peach slices along the diagonal to get those grill marks. You can use your bbq grill as well!


Step#6
After an hour of baking, your cake will be golden and look cracked on top. It won’t rise much above the rim of the loaf pan because we left the eggs out of this recipe.

Step#7
Scoop into a bowl and top with grilled peaches ( and maybe a scoop of ice cream).

FUN FACT: Why are Georgia peaches known for being so good? Its because of the climate they grow in! The hot, humid temps in the summer during the day AND night allows the peaches to produce more of that sugary sweetness! Other states that grow peaches cool down at night and slow down the process of developing sugar.
