Baby Food Bunny Cakes

Hippity hoppity, Easter's on its way! I am pretty much obsessed with carrot cake! I'm sure we can all agree it's a family favorite, especially at this time of year. I decided in order for my toddler to enjoy the yumminess that is carrot cake as I do, I wanted to make a healthier version that I would feel better about her eating. Enter BABY FOOD! Yep you heard right, this is a baby food cake recipe, which makes it oh so moist and scrumptious!

Ingredients:

-3 eggs

-1 cup coconut sugar

-1 cup vegetable oil

-2 cups all-purpose flour

-2 teaspoons baking soda

-1 teaspoon salt

-1 teaspoon ground cinnamon

-1/4 teaspoon nutmeg

-2 containers of 2.5 oz (5 oz total) carrot baby food

-2 containers of 2.5 oz (5 oz total) peach baby food

-4 oz regular unsweetened applesauce

-1/4 cup raisins

-1 or 2 carrots (peeled in strips)

Tools:

-bunny muffin tin (or any muffin tin if you don't have one)

Pre heat oven to 350 degrees

Step#1

In one bowl, combine all dry ingredients; flour, baking soda, salt, cinnamon and nutmeg

Step #2

In separate bowl, combine eggs, coconut sugar and vegetable oil. Add half of the wet mixture to the dry mixture and combine. Then add the rest and combine.

Step#4

Add baby food and applesauce, and combine.

Step#5

Add and combine 1/4 cup raisins.

Step#6

Spray your muffin tins with non stick spray and fill 3/4 of the way full. Bake at 350 degrees for about 17 minutes.

Step #7

While your little cakes bake, use a peeler to peel strips of carrots. These will be your bunny's whiskers!

Step#8

Once your cakes have baked and cooled, let them hop out of your pan onto a plate and add your carrot whiskers and raisin nose!

FUN FACT: The Easter bunny tradition is thought to have begun in the 15th Century in Pennsylvania with the German settlers.
