Asian Avocado Boats

I've become obsessed with avocados this past year. There are so many yummy ways to eat them! It is my #1 go to for lunch every day, but I wanted to change it up a little, so I thought adding an Asian flare would be a great way to go!

Also, why get a bowl or plate dirty if you don't have to? Just eat right out of the avocado! Done and done! This dish requires very little prep and can be done in no time!

Ingredients:

-1/2 avocado

- 1 cup cooked brown rice

-1 tablespoon garlic powder

-1/4 teaspoon Tamari soy sauce (low sodium)

-1/4 teaspoon Teriyaki sauce (low sodium)

-1/2 tablespoon chopped fresh ginger

Step#1

Cook rice according to package directions and add the garlic powder to the water and rice before it begins to cook. As the rice cooks it will absorb the garlic flavor.

Step#2

As the rice cooks scoop out half of the avocado and cut up into cubes.

Step#3

Mince the fresh ginger and set aside.

Step#4

Once the rice is cooked add soy sauce, teriyaki sauce, and cubed avocado. Gently mix.

Step#5

Scoop into empty avocado shell to act as a bowl. Top with fresh minced ginger. Add soy sauce or teriyaki sauce to taste.

FUN FACT:

Avocados are a fruit in case you weren't sure! They also have "healthy fats." The same type found in olive oil and LOADED with potassium and fiber!
