Strawberry Oat Muffins

Strawberries are a long time favorite of kids everywhere, so let's make a healthy muffin with them! I love eating oatmeal for breakfast in the morning. I like to switch it up with different fruits to dress it up. There are so many ways to eat oatmeal! I turned my breakfast oatmeal into muffin form.

It's a yummy, healthy and dairy-free treat! Perfect for kids for part of their breakfast or a snack. The combination of honey, oats and strawberries will have your kiddos asking for more!

Ingredients:

-1 cup flour (all purpose)

-1 cup rolled oats

-1/2 teaspoon baking soda

-2 teaspoons baking powder

-1/4 teaspoon cinnamon

-1/4 teaspoon nutmeg

-1/2 teaspoon salt

-1 egg

-1/2 cup unsweetened almond milk

-1/2 cup honey +3 Tablespoons

-1/4 cup olive oil

-1/2 pint fresh strawberries

Tools:

muffin tin

muffin liners

Preheat oven to 425 degrees

Step #1

Remove stems from strawberries and chop strawberries up into bite sized pieces.

Step#2

In a large bowl, combine all your dry ingredients; flour, oats, baking soda, baking powder, cinnamon, nutmeg, salt.

Step#3

In another bowl, combine all your wet ingredients; egg, almond milk, honey, olive oil and strawberries.

Step#4

Combine all wet ingredients into dry ingredient mixture and stir until combined.

Step#5

Using an ice-cream scoop, scoop batter into muffin liners in your muffin tin about 3/4 of the way full. Bake at 425 degrees for 16 to 20 minutes. Enjoy!

FUN FACT: Strawberries get their bright red color during the ripening process when the sugars in the strawberry become more concentrated. There are also natural chemicals in the strawberries called “anthocyanidin” which contribute to the red hue as well.
