I Love You Cherry Much!
Give an edible Valentine to your sweetie this Valentine's Day! White chocolate and cherry is a sweet combination in this dessert! I like to think of this as an “inside out” cupcake. Frosting in the middle instead of on top makes this a decadent sandwich!
I created a recipe that would make the cake batter flexible enough to handle the act of cookie cutting. It’s just the right consistency to spread onto a cookie sheet and cut out! Oh, and don’t get me started on this cherry-white chocolate frosting for the filling…yum! I used a white chocolate frosting recipe and added a bit of the cherry jello mix (also in the cake batter) to create that pretty pink hue and pop of cherry flavor!
Ingredients for cake:
-1 cup Cake Flour
-1/2 teaspoon baking soda
-1/4 teaspoon baking powder
-3 tablespoons cherry jello mix
-1 tablespoon sugar
-1 egg
-1/2 cup milk
-2 tablespoons canola oil
Ingredients for frosting:
-1 cup butter, softened
-2 cups confectioners sugar
-6 ounces melted white chocolate (cooled)
-3 tablespoons whipping cream
-1 teaspoon cherry jello mix
Add ons:
-Red sprinkles
-Edible pink sugar pearls
Tools:
-Parchment paper
-Baking sheet
Preheat oven to 350 degrees

Step#1
Combine all your cake batter ingredients, both wet and dry. Mix by hand until your batter is thoroughly mixed and a pretty shade of red.
Step#2
Line a baking sheet with parchment paper and spray with non stick spray. Pour your batter and spread evenly to cover almost the entire surface of the baking sheet.

Bake at 350 degrees for about 14 minutes. As soon as you remove from oven, shake red sprinkles on top and lightly press down onto the cake. Let cool completely (or put in refrigerator)

Once it's cooled you can easily peel the cake off the parchment paper. Then use your heart shaped cookie cutter and gently push down, but with your other hand gently push up from the bottom to prevent the cake from cracking.

To make the frosting, use an electric mixer to cream butter, and confectioner's sugar until fluffy.

Add whipping cream, cooled-melted white chocolate and cherry jello mix. Mix until smooth and a pretty pink hue.
Step#7
Take your heart cake cut outs and turn one upside down to frost. Then “sandwich” with another heart cake shape, sprinkle side up. Top with a dollop of frosting on top with edible sugar pearls. Eat your heart out!
