Cinna-Mini Apple Pies
My favorite thing in the world is ANYTHING cinnamon! Especially cinnamon rolls! So how magical is the combination of cinnamon rolls and apple pie? Pretty darn magical! The smell of warm cinnamon, apple goodness will fill your house with the feeling of the holidays!
I actually made these for Thanksgiving but re-warmed them for breakfast the next morning. Then BAM! it hit me, this would be the perfect Christmas morning breakfast! So get those jolly aprons on and lets get cooking!
Ingredients:
Refrigerated cinnamon rolls (I use Pillsbury)
4 green apples
2 Tablespoons of cinnamon
1/4 cup packed brown sugar
4 tablespoons butter
2 teaspoons flour (for thickening)
Tools:
-Skillet
-Muffin tin
Pre-heat oven to 350 degrees
Step#1
Peel and cut all apples in cubes (kids, have an adult help you with this!) Add the apples, cinnamon, brown sugar, butter and flour into skillet and cook on medium heat while stirring constantly. Cook until the apples are soft (but not mushy) and brown sugar has gotten dark brown and gooey.
Step #2
Spray muffin tin with non stick spray and use a small rolling pin to roll out each individual cinnamon roll into a flat disc shape. Stretch out the outer edges very gently afterwards and create a cup with the dough in the muffin tin.
Step#3
Fill each cup with your cooked apple mixture to the top of the dough cup. Bake at 350 degrees for 25 minutes until the cinnamon roll is golden around the edges.
Step#4
While the "cinna-mini apple pies" are baking, take the icing that came with the package of cinnamon rolls and stir in 1/2 teaspoon of cinnamon. Microwave in a microwave safe bowl (not the container it came in) for 20 seconds. Drizzle over mini pies after they are baked. Enjoy!
